
I’m sure I’ve mentioned before that I have a major sweet tooth. Always have, always will! It’s not the best thing to have when you’re committed to living a healthy lifestyle, so healthy desserts are my jam.
My favourite sweet indulgence is anything chocolatey. Anyone who knows me knows that chocolate is the way to my heart.
This fudge recipe that I’m sharing with you today is the best of all worlds – chocolatey, healthy and EASY.
The only ingredients you will need are:
Coconut Oil
I could go on forever about the uses and benefits of coconut oil but to keep it short I’ll highlight a few of my favourite benefits: it boosts the metabolism, it’s good for digestion, it positively impacts our thyroid and hormones, it supports immunity and it balances blood sugar.
For the most health benefits, use organic coconut oil that is cold-pressed and unrefined.
Raw Honey
Raw honey is anti-bacterial, anti-fungal, and is full of antioxidants, minerals, amino acids and live enzymes.
Make sure your honey is raw and unpasteurized, conventional honey is heated and processed which removes a lot of its beneficial properties.
Cacao Powder
Cacao powder is what makes this recipe chocolatey and delicious. Raw cacao powder is rich in antioxidants and high in magnesium, iron and calcium.
Make sure you’re buying raw cacao powder as opposed to cocoa powder which is processed at high temperatures, destroying the nutritional benefits of the cacao seed.
Optional Add-Ins
I only used the 3 ingredients listed above in my healthy fudge, but if you’re not a huge fan of the taste of coconut oil, you can add in some additional ingredients to help cover up the coconut taste:
• Vanilla extract
• Peppermint extract
• Orange zest
• Espresso
• Dried cranberries
• Mini chocolate chips
• Sea Salt
3 Ingredient Healthy Fudge Recipe
Ingredients:
1 cup coconut oil
3/4 cup raw honey
1 cup raw cacao powder
Directions:
1. Melt down the coconut oil.
2. Add all ingredients to a blender and blend on high for 30 seconds.
3. Place in silicone molds or an 8 x 8 baking dish.
4. Refrigerate for a few hours until hardened.
5. Pop the fudge out of the silicone molds or cut into squares and enjoy!
Notes:
Make sure the ingredients are blended together well otherwise the coconut oil will separate in the refrigerator.
If your oil does separate, melt the fudge down in a pot and try again! Make sure to melt it down on a low setting to avoid destroying the enzymes in the honey.
